Grapefruit Mint Popsicles

Cool off and recover from the summer heat with Recovery Grapefruit Mint Popsicles!


Homemade popsicles are the perfect summer snack, they can help keep you cool and hydrated during those hot summer months. They are a great non-dairy alternative to ice cream or other sugary snacks. These grapefruit mint popsicles are made using Thrive Remedies Recovery Tea. Recovery is a blend of adaptogenic herbs known for antioxidant, anti-inflammatory and immunity properties. This infusion is full of flavour with notes of turmeric, ginger, lemon and rooibos tea.


Benefits of Grapefruit

Grapefruits are 91% water so they are a naturally hydrating fruit. They are very high in vitamin C which helps support a healthy immune system, has anti-inflammatory properties and is a powerful antioxidant. They contain fibre which helps aid in digestion and can help with weight loss making you feel more full for longer, therefore reducing your daily calorie intake. Benefits of Fresh Coconut Water

Fresh coconut water from young coconuts is full of nutrients and is very hydrating. It contains electrolytes, making it a good choice for after an exercise to naturally restore what your body loses. Magnesium can also be found in coconut water, which aids in digestion and promotes heart health. While bottled coconut doesn't have all the health benefits that fresh coconut water does it is still a healthy option to add some extra flavour to your recipes. It is always best to read the label and make sure it doesn't contain a lot of added sugar or salt in the bottled versions.


Benefits of Mint

The most well-known benefits of mint are that it can aid in digestion, soothe an upset stomach, help with indigestion and minimize gas and bloating especially when it is in tea form. Vitamin A in fresh mint contributes to its antioxidant and immune-boosting properties. Incorporating mint into your cooking is the best way to get the most out of its benefits and it adds a delicious flavour!

Recipe:

2 tbsp maple syrup

3 tbsp filtered water

1/4 cup mint, chopped

1 Thrive Remedies recovery tea

1/2 cup fresh lemon juice

1 cup coconut water

1 grapefruit, skin cut off and cut into pieces


Instructions:

1. Place the maple syrup, water and mint in a small pot and bring to a boil. Reduce heat to medium and let simmer for 2-3 minutes. Set aside.

2. Mix the lemon juice, coconut water, mint syrup and Thrive Remedies recovery tea in a pitcher.


3. Once mixed, pour into your popsicle moulds, leaving some room for a grapefruit piece and stick.

4. Place the cover onto the moulds and insert the popsicle sticks. Freeze overnight.

5. To remove the popsicles from the mould, run them under hot water for 30 seconds and gently pull on the popsicle sticks. Enjoy!


Note:

The popsicles will expand a bit as they freeze, so leave a little room on top.
